Starter

Time needed for cooking: 35min.
Ingredients
- 200g of tomatoes
- 250g of aubergines
- 300g of courgettes
- 300g of red peppers
- 250g of green peppers
- 50g of onions
- 4 cloves of garlic
- Olive oil
- Thyme, laurel, salt and pepper
Preparation
1- Cut the aubergines, courgettes into strips and the tomatoes, onions in to slices.
2- Put the whole preparation on a plate and place in the oven at 90°c for 35 minutes adding some water during cooking.
3- Marinate the cooked vegetables with 2cl of Banyuls vinegar and olive oil.
4- Hollow out and remove the seeds from the peppers, cut them into strips and place in the oven for 30 minutes. Then peel them.
5- Arrange the vegetables on a plate and sprinkle with some olive oil, garlic, thyme and laurel.
6- Serve cold with anchovies and with some bread rubbed in garlic and olive oil.
