Ingredients
- 200g of minced beef
- 500g of sausage meat
- 5 to 6 crushed garlic cloves
- 3 tablespoons of flour - 2 eggs
- 1 tablespoon of chopped parsley
- 100g of diced lard segments
- 50g of diced cured ham segments
- 200g of pitted green olives
- 1 finely chopped onion
- 2 tablespoons of tomato concentrate
- 2 tablespoons of olive oil
- Salt and a pinch of pepper
Preparation
1-Mix the minced beef and sausage meat in with the garlic, parsley and eggs.
2-Salt and lightly spice.
3-Make some meatballs and roll them in the flour.
4-Heat the oil and melt the lard in a cast iron cooking pot.
5-Brown the meatballs in the resulting fat then remove them.
6-Sauté the onion then make a white sauce with the remaining flour and 2 glasses of water.
7-When the preparation has started to boil again, season with salt, spice and tomato
8-Add the olives, the ham and the meatballs (the meatballs need to be floating in the sauce).
9-Cover and allow to stew for between ¾ and 1hour.
