Time needed for preparation: 30 min.
Time needed for cooking: 15 min.
Ingredients
- 125g of flour
- 1 pinch of salt
- 80g of sugar
- 4 eggs
- ½ sachet of yeast
- 1 zest of lemon
- 60g of melted butter
Preparation
1- Pre-heat the oven to thermostat setting 7.
2- Gently melt the butter in a “bain marie” double boiler.
3- Beat the eggs and sugar thoroughly together in a salad bowl.
4- Add the flour by first lifting the dough then the butter.
5- Butter the baking tin and fill it with the dough.
6- Bake it at medium heat for 10 minutes. Take it out as soon as it is golden.
7- Place a moist cloth on the table and unmould the cake on to it.
8- Spread the pastry cream or the apricot jam then roll the cake with the help of the cloth.
9- Slip it onto a serving plate and sprinkle it with caster sugar.
